Since it was a gorgeous day today, my husband and I decided to set up the grill at the new(ish) house for the first time. To go with this lovely day, and our burgers, I wanted to make a quick, fresh dish. Drawing (a lot of) inspiration from bruschetta, here is my version of a very quick tomato salad.
Ingredients:
1 large beefsteak tomato
2 Tbsp olive oil
1 Tbsp garlic
1 Tbsp chopped parsley
1/2 tsp salt
Pinch of pepper (to taste)
Instructions:
- Chop the tomato into chunks.
- Add all the other ingredients and toss together.
Sometimes, a recipe can just be simple and delicious. I ate the tomatoes right out of the bowl, and I enjoyed it both immediately and a few hours later.
