Anyone with allergies or food intolerances knows it’s tough to go out to eat.  They probably also know that it’s even harder to get a dessert.  Let alone a decent one.

I went to an all inclusive Sandals Resort in St. Lucia for my honeymoon in March of 2014, and one chef didn’t want to hear that I would be the only one to not have a dessert that night.  He (somehow) figured out how to make a completely dairy-free strawberry shortcake.  Now, I have multiple fruit allergies, but I’ve been able to eat strawberries without a problem.  He took the time to listen to my allergies.  To talk through what I liked, and he came up with the below dessert.

So I just wanted to give a shout out to him, because he really made that meal all the more special.
